Warm Chorizo & Chickpea Salad

With chorizo and chickpeas, you’ll love the bold flavours in this superb salad! The chickpeas will keep you full and also give you some of your five a day.

Ingredients (serves 4):

280g chorizo (sliced)
1 large red onion (finely sliced)
2 red peppers (deseeded and cut into thin strips)
400g tinned chickpeas (drained)
12 cherry tomatoes (halved)
1 tablespoon red wine vinegar
100g rocket (to serve)

Method:

1. Put a large pan over a medium heat and dry-fry the chorizo for about 10mins, until it is golden. Once cooked, use a slotted spoon to move the chorizo out of the pan and set it aside.

2. Add the onions and peppers to the pan and stir them until they are slightly softened. Add the chickpeas and tomatoes to the pan and warm them through.

3. Pour in the red wine vinegar and season lightly with salt and pepper. Give one final stir and then serve into bowls, with the rocket placed on top.
