Miso Salmon with Ginger Noodles

This healthy dinner is packed full of vitamins and goodness, and it’s ready in only 25 minutes!

Ingredients (serves 2):
100g wholemeal noodles
1 1/2 teaspoons of brown miso
2 teaspoons balsamic vinegar
1/2 teaspoon smoked paprika
2 skinless salmon fillets (about 230g)
1 tablespoon rapeseed oil
30g ginger (cut into matchsticks)
1 green pepper (deseeded and cut into strips)
165g leeks (thinly sliced)
3 garlic cloves (finely grated)
160g baby spinach

Method:
1. Put the noodles in a bowl and then cover with boiling water and set aside to soften. Then, heat the grill to medium and then place some foil on the rack.

2. Mix together 1 teaspoon of the miso with the vinegar, paprika, and 1 tablespoon of water, then spread this over the salmon fillets and grill for 8 minutes, until it’s flaky and cooked.

3. Heat the oil in a large work and stir-fry the ginger, pepper and leeks on a high heat for a few minutes, until they have softened, then add the grated garlic and cook for 1 more minute. Drain the noodles and save two tablespoons on the water to mix in with the remaining miso.

4. Add the drained noodles, miso liquid and spinach to the wok and toss all of the ingredients together over the heat until the spinach wilts. Centre the noodles on the plate, top with salmon, and serve with any remaining juices!

Top Tip: Finely chop some fresh chillies and add to this dish for a little kick!
